Gourmet Salt Flakes - Maldon Salt Company 570g - Falafel

Falafel Sandwich (makes approx. 30-35 balls / 8-10 pittas)

  • 2 x 400g chickpeas, drained and rinsed
  • 2 x garlic cloves, roughly chopped
  • 2 small red onions, roughly chopped
  • 2 tsp ground cumin
  • 2 tsp ground coriander
  • 1 tsp paprika
  • 1 tsp chili flakes
  • 4 tbsp plain flour
  • Coriander, large handful
  • Flat leaf parsley, large handful
  • 2 TSP MALDON SALT
  • Vegetable oil for frying
  • 8-10 pitta breads to serve
  • Salad (lettuce, chilies, pomegranate, shredded cabbage, red onion, tomato, pickles) to serve
  • Chili sauce
  • Tahini / tzatziki / houmous
  1. To make the falafel mix, first pulse the onion and garlic in a food processor. Then add all the other ingredients and blitz for 1-2 minutes. Use a spatula to scrape down the sides of the processor and then blitz again for a further minute, until the contents combine into a paste.
  2. Roll this mixture into walnut-sized balls. The mix should make 30-35 balls.
  3. Fill a pan one-third full with vegetable oil and heat to 180°. Cook in batches until golden (approx. 2 minutes). Remove with a slotted spoon and drain on kitchen paper.
  4. Serve in pitta breads with salad, pickles and sauces of your choice. Add some pomegranate to the salad for a sharp Mediterranean / Middle-Eastern bite.
